Khiva Cuisine Inside Ichan Kala: What to Try

Inside the walls of Ichan Kala there are plenty of places serving Khorezm cuisine, which differs from both the Bukhara and Samarkand traditions. The region's signature dish is shivit oshi, thin green noodles with dill served with meat and gravy. Khiva-style samsa has thinner dough and is often made with pumpkin in the cold season. On the streets near the Kalta Minor Minaret, hot non bread is sold straight from the tandoor, and teahouses offer simple but filling soups for lunch. For something sweet, try local navat — crystallized sugar on threads, served with tea. This whole range of dishes can be found within a few minutes' walk of each other inside the old town.
